What's Cooking Thursdays? Cake Pops

Yesterday was my best friends birthday. I wanted to make her a cake, but I didn't want the same old thing. I've seen cake pops around the blogosphere and decided to give them a shot. They were relatively easy and oh so good. I don't even like cake but these cake balls are the best.


Prepare cake according to the package directions. Bake in a 9 x 13-inch pan. Allow to cool completely. Once the cake has cooled, place sections of the cake into a large bowl and crumble with your hands or a fork. When you’re finished, you should have very fine cake crumbs. Next, work the can of icing into the cake crumbs. (Use 3/4 can of icing for firmer cake balls.) Then, roll the mixture into balls. I used my cookie scoop. Throw your cake balls into the freezer until firm, so they don't crumble when you coat them in chocolate. Melt the chocolate according the package directions.
Insert a lolli pop stick into each ball. Dip into chocolate until the ball is covered.Place them back down onto waxed or parchment paper until the chocolate has set. Decorate and enjoy!

I really have not been cooking new recipes at all. We've been using up meals in the freezer, having simple meals. I fixed the boys pizza pinwheels the other day for lunch so that's the new recipe you get. :)

You'll need:
1 recipe pizza crust
3/4 teaspoon garlic salt
1 teaspoon dried basil
1 1/2 cups shredded mozzarella cheese
1/2 cup chopped pepperoni
1 cup pizza sauce
Roll out pizza dough into large rectangle. Sprinkle dough with garlic salt, basil, cheese and pepperoni. Roll dough up tightly to form a log. Slice into 1-inch pieces. Place rolls on lightly greased baking sheet. Bake at 425 degrees for 8-10 minutes or until golden brown. Serve with warm pizza sauce.

Meal Plan 2/13

I didn't menu plan last week and all week long I wondered why. I was totally off my game and at 5:00 each night, I had no clue what to feed the troops. I couldn't even tell you now what I fed them. What I can tell you, is that I will be menu planning from now on. :)

Need a quick and easy weeknight dinner? Try Chicken Cordon Blu Chowder!
 


 
    2 cans {Campbell's} Chicken Corn Chowder
1 cup cooked diced chicken
1 cup cooked diced ham
1 cup shredded cheese (Swiss is ideal, I used mozzarella because I was out of Swiss)
 
Combine all ingredients in a medium saucepan. Warm over medium low heat until heated through. Serve with bread and a salad.

I was supposed to share the chicken corn blu chowder but once we tried the chicken taco soup, I knew I had to share it this week. It is so good, even A ate it! I served it with tortilla chips - it would be a perfect dip/dinner for the Superbowl.


you'll need:
1/2 onion, diced
16 oz jar salsa
16 oz chicken stock
1 can of corn, drained
1 package taco seasoning (or homemade)
3 oz tomato paste
1/2 tsp cumin
1 lb chicken breasts, cooked/chopped
10 oz cream cheese - I used Kraft Cooking Creme original
In your crock pot, combine all ingredients except cream cheese. Cook on low for 6-8 hours. Half an hour before serving, stir in sour cream.  Serve with shredded cheddar cheese and tortilla chips.

This past week was a little busy. We had leftovers twice because it was easier. I haven't been grocery shopping much lately, we've been trying to use up what we have.

I've been wanting to try some new recipes and use my slowcooker. I had some beef stew meat in the freezer that I had no clue what to do with. I found this recipe on the kraft website and decided to try it out. I have to be honest. It wasn't a winner for our family. C and I loved it, hubby didn't and A wouldn't touch it. He actually doesn't touch much these days though.


2 lb. beef stew meat, cubed
1 can cream of mushroom soup
1 onion, chopped
2 tsp garlic
1 cup beef broth
2 tsp. paprika
1 cup Sour Cream
2 Tbsp. flour
1 lb egg noodles

Place meat, mushroom soup, onion and garlic in slow cooker. Add broth & paprika.. Cook on LOW 6 to 8 hours. Mix sour cream and flour in slow cooker. Cook, covered, on low 15 min.  Cook noodles as directed on package. Drain noodles; place in large serving bowl. Add meat mixture; mix lightly.  Serve.

Meal Plan Monday 1/22

I decided it would probably be easier to tell you what we ate last week as opposed to what we're eating this week. I've noticed the meal plan I share with you, and what we actually eat are two way different menus.
This past week has been crazy. My father in law was released from the hospital, after being there since July. So hubby was taking care of him a lot. Somewhere between school and soccer, C picked up pink eye. He now has it in both eyes. A is starting with a cough. On top of all that, it snowed! So we spent a few hours each day this weekend playing in the snow.

Last week we enjoyed :


Hot dog Spaghetti
Grilled Cheese & Tomato Soup
Steak & Salad

Ham & Potato Soup
Leftovers

Lasagna with French Bread

It was a yummy week. :)

This week we hope to have:
