Chicken with Mustard Sauce

So... this meal did not turn out as planned. It smelled so good and I was so looking forward to eating it. Edward and I were cutting the meat off the bones for the boys and it was NOT cooked all the way. So Edward pulled all the meat off the bones while I warmed up some leftover steak. We'll have the chicken tomorrow over rice. I'll still share the recipe because it smelled so good!
1/4 cup lemon juice
1 tbsp Worcestershire sauce
2 tbsp garlic salt
3 tbsp honey, divided
7 chicken drumsticks
olive oil
crushed red pepper
1/2 cup OJ
3/4 cup chicken broth
1/4 cup Dijon mustard
2 tbsp flour
Mix lemon juice, Worcestershire sauce, garlic and 2 tbsp honey in plastic bag. Add chicken and marinade.
Spray olive oil in skillet. Sprinkle chicken with red pepper. Brown chicken about 15 mins.
Add OJ and chicken broth to skillet. Turn down heat and finish cooking chicken.

Remove chicken from skillet, place on plate and cover with foil to keep warm. Add mustard, flour and remaining honey to skillet. Simmer, stirring frequently for 5-7 minutes or until saucy.

Add chicken to skillet, turning to coat and serve.

Tuesday - was supposed to be Chicken Thighs with Mustard sauce... ended up being leftover T-bone steak from my sister in laws get together Saturday night.

Wednesday - Chicken with Mustard Sauce and Rice (was supposed to be Chicken Thighs with Mustard sauce)

Thursday - **Edward's Birthday** He has requested Edward's cheeseburgers, steak fries, salad, and cake!

Friday - porkchops, not sure what kind yet

My trip(s) for today!

Edward and I (the kids stayed at mom's last night!) decided to run to Kmart for Kmart doubles on our way to pick up the kids. We stopped at one of the farmer's markets on the way...

and picked up half a peck of pears, half a bushel of peaches and a a bag of apples.
then we headed to Kmart...

(like my boxer waiting oh so patiently for her new dog food?)
We did OK this time, not great. But then again, Edward was with me and he got some hunting gear too. (green was free)
We got:
1 ban deodorant
2 skintimate shave gel
1 Tylenol child's cold medicine
2 - 4.4lb bags of pedigree dog food
1 box of Ziploc bags
1 huggies wipes
1 dawn hand renewal
1 carpet fresh foam
1 Clorox wipes
1 fudge rounds
1 little debbie cupcakes
4 boxes raisin bran
1 venom energy drink
total before coupons:$62.80

I am thankful for the Biggest Loser!! Yes, the tv show. The whole family, even our 4 year old love to watch this show. And it reminds all of us that we need to be getting the right amount of exercise in each day. Especially with winter coming up. we won't be outside running around as much as we are now. It also reminds me about porton sizes, and to be serving healthy, filling meals (and snacks) to my family. So thank you NBC and The Biggest Loser for helping my family to remember to stay healthy!

This is one of our favorite dishes. Edward taught me how to make them way back when. I always thought they were so expensive to make, then I realized that one batch of them feeds us for two nights. So the expenses get split in two making it manageable for our budget.

You need:
1-2 lbs of ground beef (depends how much meet you want in your shells) ($1.22)
1-2 packages flour tortillas (depends on how much meat you have. we usually use 14- 15 shells) (1.53)
1 can cream of mushroom soup (1.00)
1 can enchilada sauce (1.39)
milk (enough to fill the can of enchiladas sauce) (free from WIC)
1 8oz bag of shredded cheese (free from WIC)
1 small onion ($.10)
1 green pepper (free from garden)

chop onions. Add to meat and cook until brown. drain fat off and set aside.

add enchilada sauce, and mushroom soup to sauce pan. fill empty sauce can with milk and add to mixture. heat through. spoon into bottom of two 13 x 9 pans - just enough to cover the bottom of the dish.
I don't know where the next picture went but lay tortillas on counter. Add about 1/4 cup of meat. Add cheese and pepper. (I added some squash to some too!) Roll tortilla and lay seam side down in dish.

Once the dish is full, pour remaining sauce on top of enchiladas. Once the dish is full, pour remaining sauce on top of enchiladas. Bake at 350 degrees for roughly 45 minutes.

Top with sour cream if desired. Enjoy!

Recipe cost : $5.24 / 2 = $2.62 per night!

Cowboy Pockets

This is a new recipe I am "allowed" to serve again. In fact, Edward loved it, and he was the one I was the most worried about. Aiden loved it also and Colin thought it was OK. He hates trying new things but we're working on that.

Cowboy Pockets

1 large chicken breast
1 can Pillsbury Grand biscuits
assorted veggies - I used butternut squash, celery, onion, and green peppers

Cook chicken and shred. Wash and chop veggies. Roll biscuits until flat. Combine all remaining ingredients. Divide filling mixture among the dough rounds. Fold the edges of the biscuit up to seal and transfer to baking sheet. Bake at 350 for 20 minutes or until biscuits are golden brown.

So fast and easy and delicious!

Finally something decent in the news

I'm sitting here working on my grocery lists and menu plan for next week, checking my email, surfing the web and watching the news. They are talking about football (yay! I'm so happy it's football season again)there is really nothing good in the news today. There's stories of murders and stealing, beatings and other horrible occurrences. But I came across this link while poking around online and I had to share it with you. Although yes, it still does contain some tragedy, it also shows us that there are still good people out there. People who keep their word. People who care for others. I hope this story touches you like it did me.

Meal Plan Monday

I haven't been very good at following a meal plan lately but I hate looking at the clock and saying "crap, I have nothing out for dinner". Plus we're going to have to tighten up with our budget so I need to make our meal plans and stick to them. I'm also going to try to use my slow cooker more often. I have bee using it alot lately and LOVE it. SO.... here goes.

Slowcooker Buffalo Chicken Sandwiches , mac and cheese, baked squash (we're going to try this, Colin told the lady at the store he liked squash so we'll see.)
