I have been wanting to try this recipe for a long time. Today I finally did and I am so glad. It was wonderful! The only thing I didn't like was how long it took to cook (25 minutes) I am not a very patient person. But it was well worth the wait. And fairly easy to make.
German Apple Pancake (serves 2-3 people)
2 large eggs
1/2 can of Carnation Evaporated Milk
3/4 cups all purpose flour
1/2 tsp vanilla extract
2-3 tablespoons butter
2 medium apples peeled, cored and chopped ( I used 1 and didn't peel it)
1/2 cup packed brown sugar
3/4 tsp ground cinnamon.
Preheat the oven to 425 degrees Fahrenheit.First, mix together the eggs, milk, flour and vanilla. Beat until there are no lumps and set aside.In a 10″ or 12″ nonstick pan that’s oven safe, melt the butter. Saute the apples slices until soft. Mix in the brown sugar and the cinnamon. Remove pan from the heat and pour batter over the apple mixture in the pan. Place pan in the oven and bake for 25-30 minutes or until pancake is puffy and golden. Remove from oven and let sit for a couple of minutes. Then place a large plate over the pan and flip the pancake onto the plate.
