Meal Plan Monday

Hopefully I'll stick to the meal plan this week, we haven't been lately...

Monday- turkey burgers, mac and cheese, peas

Tuesday - some kind of pork chop recipe :)

Wednesday - chicken Parmesan, corn

Thursday - stuffed shells, salad

Friday - cal zones

Saturday - Aiden's 1st birthday party

Sunday- Aiden's birthday!! steak, baked potato, broccoli casserole

Another KMart doubles trip

Here's my KMart doubles trip from 8/22/09.

Yet another round of doubles start Sunday - 8/30. Supposedly the last of the year. :(

I bought:

Gratituesday

Last Thursday (8/20) my husband got up as usual for work around 4:30 am, headed outside to his car and for some reason turned down to look at the shed, which is right beside our back door. And to his surprise, there was a man standing there watching him. When the man realized Edward saw him, he took off through the yard and up the street. Edward ran after him for a little while and lost track of the guy so he came back home and got me up to let me know what was going on. Our boxer, Ryleigh, was going nuts so we let her inside. She slept (if you can call it that, more like laid on top of me, growling every few minutes) the rest of the morning.

I was terrified - I still am. Edward bought and installed a motion light for that side of the house(we have it on the other side but not on that side), bought some pepper spray and made sure all the door locks and windows are in excellent working order. He has started walking around the house before he leaves. Ryleigh has been very protective of the kids and I, even more than she usually is.

I have been praying every night for us to make it though safely and every morning when I wake up and realize it we're still safe. I know he probably won't be back, but I can't help but worry. I hate to think about what could have or would have happened if he just left like he usually does and didn't see the man. I thank God that instead of getting into his car and driving to work, my husband felt the need to look around at his surroundings.

I love when Kmart has their double coupon event. I have somehow managed to go every time (once I went three times!) and have NEVER spent more than $30. This past time I went wasn't one one of my greatest trip (that would be my first trip $150ish worth of things for $28) but it was decent. Red is free after coupons, the rest was super cheap. (2 full sized sunscreens for $0.75 each - can't beat that.)

I made pizza sauce!!!

My first attempt at making pizza sauce was a success!! While it was a little thin and the tomatoes weren't alllll the way crushed like I would have liked;but it was still yummy.

Ingredients:

3 or 4 tomatoes

2 teaspoons olive oil

2 cloves garlic

small onion

handful of basil leaves

handful of oregeno

To do:

In a medium sauce pan heat oil for about 2 minutes. Mince onion and garlic. Add to pan and cook until soft. Add tomatoes ( I chopped mine into quarters) and cook 10 - 15 minutes, smashing tomatoes. ( They will get easier to smash as they cook) Add basil and oregeno, simmer for 10 minutes more. If sauce is not thick enough for you, the longer you simmer, the thicker it should become.

Gratituesday

I am very grateful for my boys today (and everyday). Even when they are sick, or [still] not sleeping through the night, I am so eternally grateful that God blessed me with two wonderful boys and not girls. No offense to girls, but I honestly don't think I would have been able to handle them. I am not your girly girl. No makeup, I don't care (much) about clothes and hair and nails and stuff. I would not know how to handle a girl. I love that my boys are boys. Messy, dirty, rough housing boys.

Meal Plan Monday

I am very behind this week. But it doesn't matter much. Colin is at his grandmothers, Aiden has a cold and is in the stage of not wanting to eat ANYTHING I serve him. Edward doesn't care what we eat as long as it's (almost) ready when he gets home and it has meat in it....
