Meal Plan Monday 6/27

Where has this week gone? I find it hard to believe it's Sunday night already! We ended up going to Hershey on Saturday, hopefully I'll get to post some pictures tomorrow. We had a blast! I made some pizza Thursday night and made Stromboli Friday because the peppers were so great!

I have tons and tons of eggs right now. And I have no idea how to use them up. The boys tolerate egg salad and hard boiled eggs, but there's only so much of that you can eat! I would love any good egg recipes you have and are willing to share!!

I really have no motivation to cook at all. Our freezers are stuffed full and I need to clean them out a bit. I have so much going on this week so I'd like some easy meals but I'm not sure what to cook! I'm hoping to find some inspiration from my fellow bloggers at MPM!

This week we're eating:
  • We ate a late lunch at CiCi's with some free buffet coupons from my sister so we snacked for dinner
  • Grilled Chicken Salad (using leftover chicken)
  • Burgers
  • Pizza - peppers from the garden!
  • not sure yet
  • We might be at a wedding, if so the kids will be with my parents and we'll be at the wedding

Garden Update 2010 #4

I got to use our first banana pepper in our pizza from the garden last night! It was so good that I made stromboli with more banana peppers tonight. :) The pepper was the only thing I've gotten to harvest so far this year, except lettuce and some spinach.

One of the many cherry tomato plants. I thought we had six, turns out we have like 10. Which is fine except C and I don't like tomatoes and it's really hard to make sauce out of cherry tomatoes. (trust me, I tried last year!)

LOTS of lettuce and a little spinach.

I planted some watermelon in the kids little kiddy pool. I hope it does okay. :)

As you know, we have tons of pepper plants. This is one of them, I have no idea what kind of peppers they are. I love how they are growing straight up from the plant!

Homemade Chocolate Icecream

The boys got me an ice cream maker for Mother's Day and I have been playing around with a bunch of recipes trying to find one we all liked. We're really picky about our ice cream so it's been really hard finding a good recipe. I finally tweaked a couple and this is what I came up with.

3/4 cup sugar
2 tablespoons cocoa
1 cup heavy cream
1 cup milk
1/2 teaspoon vanilla
1/8 teaspoon salt

Mix all ingredients in a medium bowl. Add to ice cream maker. (It's important that you mix all the ingredients in a bowl other than the ice cream maker bowl!! I found this out the hard way.) Mix in ice cream maker according to maker instructions or until it reaches desired consistency. Enjoy!

This is the ice cream straight from the maker or "soft-serve". I couldn't take a picture of it after it has been frozen after being made because it's never lasted that long!

Strawberry Picking!

If you "like" Feeding Four on Facebook, you probably know about my excitement this afternoon when I found a Pick Your Own Strawberry Farm about 20 minutes from my house. Today was the last day they guaranteed strawberries so I packed up the boys and we headed out. I thought they would LOVE doing this but I was wrong. They lasted for about 15 minutes then went and played in the truck (which was parked right beside the patch, thankfully and we were the only ones there) for the rest of the time.

I could not believe this sign! "No small or bad children"!? Seriously!? What is small? A is only 20 months, guess that's not small because they didn't say a word about him. (Maybe that's why they drove up the hill and sat for a few minutes... to check on me?)

Not long after this, he shed his shirt and ran to the truck. :)

Most of the strawberries that I picked while the boys were sitting with me went in their mouths! I had a blast watching them. :)

I coaxed them out of the truck and he insisted on bringing his "umbella". It was a bit hot out today...

The fruits of our (my) labor! :) And I bought 2 watermelon plants. I see lots of Strawberry Popsicles in our future. Mom and I are talking about going to do more picking Friday, providing they still have strawberries. Now I just need a good pectin free strawberry jam recipe that'll work for me!!

HomeMade Strawberry Popsicles

We had some yogurt and strawberries that were about to go bad so I made a Popsicle recipe for my boys that is actually healthy for them! They've been asking for Popsicles for breakfast now. :) It is so easy to make, it takes less than five minutes!
You need:
1 cup strawberries
2 tbsp sugar dissolved in 2 tbsp warm water
1 cup yogurt

1. Hull strawberries and place in food processor or blender.

2. Puree strawberries.

3. Mix strawberries, yogurt and sugar water in medium mixing bowl

4. Pour mixture into Popsicle molds and freeze until solid.

Giant Trip 6/21

I told you I was planning a trip to Giant to take advantage of the FREE ticket to Hershey when you buy $60 in participating products promo. I am very happy with what I got and how I did. I did spend a little more out of pocket than I would've liked. The way I look it is that I got things that I can use as meals. I don't really need 50 salad dressings (especially since I usually make my own) or 45 blocks of cream cheese. But the hot dogs, bacon and mac and cheese will go as a meal which to me justifies the higher price of the bill. :)

Total Before Coupons : $123.58
Total OOP : $49.56 (paid with a gift card)

I also received a $2 catalina from Oscar Mayer, a $3 catalina from Kraft and a catalina for a FREE ticket to Hershey Park or 4 tickets for $60. :)
So as long as I can stay out of the store the rest of this week and next, I'll be on track for groceries!

Meal Plan Monday - 6/20 - 6/26

We're back from the beach! It's been a wonderful week, not having to worry about dinner each night. But it's back to the old grind and that means I have got to menu plan, or we will not eat. I have so much to do this week, and I was so hoping this would be a very easy week for us. C goes to summer "school" next week and that will last through the next month. I was planning on doing no grocery shopping this week but then I saw the Giant ad with the FREE ticket to Hershey when you buy $60 in participating products. Hubby has promised the boys we are going to Hershey this year, so I'm headed to Giant in the morning. Check back for my trip!

Garden Update 2010 #3

I have a question for those of you who plant onions. I have them planted for the first time this year and no matter how often I search and read, I have no clue what I'm doing. I read that I should dig up the onion when the stalk fell over halfway. I did and the onion was maybe half an inch in diameter. How do I know when to dig them up?!

Pumpkin flowers! I still don't see any pumpkins forming but there is tons of flowers!

Potato sprouts. We are trying potatoes in a container this year, they seem to be doing very well. We'll find out how well they're doing under there when it's time to dump them out.

Two of my broccoli plants. I have no clue as to why the plant on the right is twice as big as the one on the left. They were both planted the exact same time, from the exact same 6 pack planter.

Cherry tomatoes! A is SO excited for the tomatoes to turn red, he wants to eat them right now. This is the one I have planted in a container.

One of our many many pepper plants. I think this is one of the biggest peppers so far.

Meal Plan Monday 6/13 - 6/19

I was really hoping this past week was going to be an easy one. I had so much to do to get ready for the beach. My house was a wreck from us running all week. So I had plans to stay home, clean and get ready for vacation. As it turns out, I had to run somewhere every single day last week. So I got nothing done. We leave for the beach in one day and I have nothing packed, and still so much to do. Luckily, hubby decided to help me out big time today. He watched the boys for most of the day. He took it upon himself to grab a broom and swept the whole house. He saw my [lonnnng] list laying on the table and did all but 3 things on it! Whatever I asked him to do, he did. Now all I have to do is get packed.

Our menu last week got kind of screwed up. I did make Sweet-and-Sour Pork, but it turned out horrible so we had hot dogs instead. I was so exhausted one night from that day's events so hubby offered to pick up pizza on the way home. And since I have no freezer meals still, I agreed. Hubs and I had a date night (Thanks Mom!) and we went out and got some really awesome Stromboli. The Chicken and Pasta Spinach Bake was a hit. We will be fixing it again - but we'll wait until fall.

This week will be so easy for me because the boys and I are at the beach! But hubs will be home because he couldn't get off work.

Garden Update 2010 - #2

Instead of showing you my whole garden (which keeps growing daily by the way) I decided to just share with you some of the "surprises" I found today.

Flowers on our squash plant! I found the first one this morning, but by the time I got a chance to get a picture of it, it had closed. Then I noticed there was FOUR other flowers just about to open! Hopefully there will be lots of squash in our future.

I have noticed a lot of little flowers on our tomato plants lately, but no tomatoes. Today while I was weeding I found this beauty! Hubby is so excited to finally eat some home grown tomatoes. He has been asking for weeks if there was any.

I'm not sure why this picture turned out blurry. I took about 8 pictures of this pepper and in everyone the pepper was blurry. I'm thinking I might have switched the focus on my camera?

Our strawberry bushes have been giving us tons and tons of strawberries. We made some strawberry Popsicles today and I hope to share the recipe with you soon! I want the boys to taste test them first. ;)

Hubby brought home some more plants today, two more pepper plants and 2 eggplants. I'll share pictures once I figure out where to put them!
