4 baking potatoes
1 cup Cheddar Cheese
3/4 cup sour cream
1 TBSP (Buffalo style) hot sauce
1 pound chicken breast, cooked and cut into strips
1/4 cup (Buffalo style) hot sauce
1 TBSP butter
3/4 tsp chili powder
Wrap each potato in foil and bake at 425 degrees for roughly one hour. Cut potatoes, scoop out pulp and place all of potato in large bowl. Add sour cream, 1 TBSP hot sauce, and half cup of cheese. Stir to combine and top with remaining cheese. Bake at 425 degrees for 5 to 8 minutes, or until cheese is melted. Combine cooked chicken, 1/4 cup hot sauce, butter and chili powder in a medium bowl. Serve potato mixture topped with chicken mixture.
Because I have two small boys and I used HOT sauce, I did not include the hot sauce in the potato mixture. I served the boys regular chicken and the potato mixture. For my bowl, I added hot sauce to the chicken and the potatoes. Both ways were wonderful!
