Easy Home Made Peach Salsa

I love chips and salsa. My nightly snack is either ice cream or chips and salsa. With summer here we have an abundance of tomatoes. Since A and hubby are the only ones who actually eat tomatoes, I had to find a way to use up all the others. Salsa seemed like the perfect way.

6 cups tomatoes - chopped (I don't skin mine)
4 cups peaches - chopped (more if you want more of a peachy taste)
3 cups chopped peppers - use different varieties for a better taste
1 1/2 cups chopped onions
1/2 cup granulated sugar
3 TBSP Garlic Powder (roughly)
1 cup cider vinegar
1 6 ounce can tomato paste

Chop all veggies (or have your darling husband do it for you ;) )

Combine all ingredients in large pot.

Bring to boil, reduce heat to low and simmer uncovered, stirring frequently (roughly every 15 to 20 minutes), for about 2 hours or until thickened to your liking.

Pour into jars and process in a hot water bath for 20 minutes. (can also be frozen)

Enjoy with a big bag of tortilla chips.
