Anyway. I finally got around to figuring out what to do with my coconut oil. First, I substituted a few tablespoons here and there of coconut oil in place of vegetable oil. When we made tostadas, I fried the tortillas in the coconut oil. Per Erin's suggestion, I have been adding a few teaspoons into our everyday meals. Our pizza dough was made with coconut oil and no one was the wiser, except me of course. There is tons and tons of recipes on THIS PAGE.
I even gave our border collie, who has very sensitive skin, a teaspoon or two with his food once a day. His coat is shinier and his skin is no longer cracked and bleeding. (It was bad. And nothing we gave him helped.) A's eczema is just starting to come back. It seems to flare up every once in a while and I can't figure out what triggers it. I have read on other blogs that coconut oil has helped with eczema. So I'm starting to rub some on his skin after his bath. We'll see if it helps!
