I finally found a macaroni and cheese recipe that our family has approved! It does take a bit longer than boxed mac and cheese does to make, but the end results are worth it.
You'll need:
1 lb macaroni
6 tablespoons all-purpose flour
1/2 cup butter or margarine
2 cups milk
1 and 1/2 cups extra-sharp cheddar cheese
1/2 teaspoon black pepper
Preheat oven to 450 degrees. Cook macaroni according to package instructions. Drain and set aside. In the same pot you cooked the macaroni in, melt the butter, over low heat. Add flour and pepper; whisk into melted butter until smooth. Slowly add milk and whisk into butter mixture. Bring to boil and then simmer until thickened, about 2 minutes. Remove from heat. Add 1 cup cheddar cheese and stir until cheese melts. Add macaroni and stir until coated. Pour into a baking dish. Sprinkle remaining cheese on top and bake for 20 minutes or until hot and bubbly.
We love homemade mac n cheese! I'm going to make it this week for lunch.
