Our menu last week went according to plan. We had turkey both at my mother in laws house and my moms house. We love turkey! We cooked our turkey two weeks ago and already most of the leftovers are gone. My mom sent some leftovers home with me and they're gone! How was your Thanksgiving?

2010 Advent Calender

Christmas is 28 days away! Time to start planning the advent calender for the month. Last year, our system worked and didn't work. It was placed too high for the boys to reach so this year, I'm going to use the same system, hung lower for them to reach. Plus, we have a lot more fun activities for them to do. A is old enough this year to be able to do them all.

What's for Dinner? Chicken Ring!

One of our favorite ways to use up the leftovers from a roast chicken or turkey is to put it in a Chicken Ring. I found this recipe on a blog last year sometime and have tweaked it to be my own. I wish I could find that blog again! There were lots of recipes I wanted to try. Anyway, this is a kid pleaser and could easily be made for a party!



You'll need:
1 cup cooked, shredded chicken or turkey
veggies - I use whatever I have, this time it included about 1 cup leftover corn, 1 medium potato, 1/4 cup each pepper and onion, and 1/4 cup celery
1 can cream of chicken soup
2 rolls of Pillsbury Crescent Rolls (I've also used homemade and they work great too!)


Preheat oven to 375 degrees. Mix all ingredients (except crescent rolls) in a medium bowl.




Place crescent rolls in a star shape (see picture) around the edge of a pan. Spoon chicken mixture on top.
Pull the dough over the mixture and press the small end under the larger end.
Bake at 375 degrees for 20 minutes. Enjoy!

Monday, C wanted to buy lunch at school. Today, he gets out early for Thanksgiving break so he's packing breakfast. :)

Homemade blueberry muffins (we'll see if he eats them, he said he didn't like blueberries), a hard boiled egg, and raspberries and blueberries. He'll buy milk at school.

Getting Ready For the Holidays - Thanksgiving Week!

32 days until Christmas. Are you ready for the holidays? Read my weekly posts from now until Christmas week and I'll help make sure you have an enjoyable holiday!


You've made it to Thanksgiving week! Yay! Come Thursday, you'll be very happy with all the hard work you've put in over the last few weeks. You'll actually be able to enjoy the holiday with your family this year instead of spending the whole day cooking. And really, there isn't a whole lot that needs done this week either. You've done all the hard work already!
 
Today is the day you want to take the list you made and get shopping! Everything that's not already in your pantry, buy it. Then, make everything else that can be prepared now that you don't already have stashed in the freezer.
 
 
 
Wednesday, pull everything out of the freezer and put in the fridge to defrost. Clean up any messes that have "popped up". Do as much as possible today so you can enjoy tomorrow!
 
Thursday, the only thing you should need to do is cook the turkey and warm all the fixings. Enjoy the day with your family! That's what Thanksgiving is all about after all.

Meal Plan 11/21

Well, it's Thanksgiving week! Are you ready? I sure am! I can't wait for lots of [more] turkey, potatoes and more! Yum!!

Last week was a great week. The Bourbon Chicken was awesome. We had enough to freeze for another meal. The cheeseburgers were so good, they were requested again this week.


Our Thanksgiving dinner was awesome! We all stuffed ourselves and then went for a nice family walk around the block. I'd love to do that nightly!

OUT - I am NOT cooking after shopping all morning!

Scalloped Potatoes

Looking for a great potato recipe? Look no further - you've found it! All four of us drooled over this dish. Just thinking about it makes me want to go in the kitchen and make it right now! And what's even better is he leftovers taste even better!


You'll need:
5-6 medium potatoes - peeled and sliced
1 tablespoon flour
1/8 teaspoon pepper
1 cup milk
6 slices Cheddar cheese (or 1 and 1/2 cup shredded)


In a buttered 2-quart baking dish, layer of roughly 1/2 of the potatoes. Sprinkle pepper and flour over the potatoes. Lay 3 slices of cheese on top. Top with remaining potato slices. Lay cheese on top potatoes and pour the milk over the dish.

Cover and bake at 375° for 45 minutes or until potatoes are tender and cheese has melted. Let sit at least 5 minutes for milk to thicken a bit and Enjoy!



Groceries 11/20

I went to Giant to get my free turkey, evaporated milk and chocolate chips! There was dollar doublers in the ad, making the chocolate chip deal even better. C begged for oranges, so I agreed. We get home and he "doesn't like oranges." Boys.


FREE - Turkey, 2 Heinz gravy, 2 Pillsbury brownie mixes

Total OOP: $23.99 plus, I got 400 gas point which equals out to $12 off gallons in my hubbys truck.

Cheeseburgers - Hubby's Way

When my husband and I first started dating, I ate a lot of new foods. Or rather, old foods reinvented. This was (and still is) my husbands favorite kind of cheeseburger. And it quickly became my favorite too. My mom even loves it :)

You'll need:
1/4 onion - diced
1/4 green pepper - diced
1 egg
1 lb hamburger
1 cup ketchup
1 slice of bread - turned into bread crumbs by a food processor

Combine all ingredients in a medium bowl.


Form into patties.



Cook 5 to 7 minutes on each side.  Serve on homemade hamburger rolls.

Enjoy!

Last week, we talked about buying our food and freezer cooking to make Thanksgiving about spending time with your family instead of spending the day in the kitchen. Today we're going to discuss the thing I dread most about the holidays - cleaning the house.


I don't know about you, but I could spend the whole day cleaning the house, only to turn around and it be a disaster area again. (I guess that's the price I pay for having young boys and 3 dogs though!) My trick to keeping my house looking presentable and keeping my cool while doing so is to only do as much as I can.
Sounds pretty simple, huh?

Starting Monday, I started decluttering. Less around means less to clean. You'd be surprised how many bags I have for hubby to drop off at the thrift store. My rules for pitching are if it's not been used in the past 6 months, it's gone. If we have something similar, or something that will do it's job, it's gone. We have so much stuff and it takes forever to pick the stuff up. Easy solution is to get rid of the stuff!

In my house when people come over, they will really only see 3 rooms. The kitchen, the living room and the bathroom. So I focus all my energy there. I spend a few hours a day doing a deep clean in each of these rooms and by the end of the week, I've gotten all my major cleaning out of the way. Now, I just need to spend a few minutes picking up and straightening up at the end of the night and I'm good to go.

It doesn't have to be a major chore to clean your house. Enlist the help of your family. Tell them why you need their help and most important -what you expect of them. If they think "pick up" means to pick up and put the items on the couch (or under the couch) that's what they're going to do. You need to tell them exactly what you want done ("pick up and put the items in the proper home") so that they are actually helping you instead of making more work.

I was feeling a little uninspired last night when I packed C's lunch. I bought blueberries yesterday that were gone by the night. So I threw some frozen blueberries in. I'm hoping they don't get mushy. Otherwise, he's eating leftover dinner (some kind of Fettuccine Alfredo, LOL, recipe to come later this week if I get time to post it) an apple, gummies, a pudding, and an orange.

Meal Plan Monday 11/15

It us officially the week before Thanksgiving. Holy cow! Where has this year gone?!

This past week we enjoyed lots of good foods! Our favorite was Mini Taco Bowls - after we had them for dinner, we had them twice for lunch.

Our stir fry was great, we used leftover steak from the night before. I also made sloppy joes - I had hoped to make enough to freeze, but they were so good we ended up eating them the next night as well.


Next week is Thanksgiving and we're going to be spending the holiday with family. I like to still fix a turkey dinner at our house so we have that tradition here with our boys. (And so we have leftovers!!) We'll have our turkey this week so we don't get tired of it before next week.

MORE Groceries for this Week! 11/13

I shared last night my groceries for the week. Then I ran into the store today when I was at my mom's house and did a little more stocking up.


I also gave mom some brownies and veggies.
