Meal Plan 7/31

I can not believe its already August 1st. In a few short weeks, my boy will start kindergarten. I am not ready for him to be in school every day. He, on the other hand, can't wait! I'm planning on slowing down our lives for the next few week[end]s. Football practice starts next week, so our week nights are going to be jammed packed. Yay.

Our menu last week went perfect. We stuck to the plan perfectly. :) It always makes me happy when I'm able to stick to the plan. We did eat out once, but it was planned. We went to Hershey Park. We ended up buying a meal voucher for all of us. The bad thing was it cost $128 for 3 adults and 2 kids (that also includes a $15 game voucher book). The good thing is that we still have plenty of vouchers left to feed us all again this weekend when we go again!  That works out to $22.60 per person for two days eating at the park. Not bad considering we spent $80 just on dinner last year! If you're planning on visiting a theme park, I would really recommend checking for meal vouchers!

Back to the meal plan! My sister is staying with us this week so I'm trying to fix some meals she will like. And my boys have no issues having enchiladas every week.

Date Night Idea


One of my favorite things to do is scrapbook. When hubby does it with me, I enjoy it even more! The date night idea this week is to scrapbook together!

Round up some pictures of the two of you (maybe from a previous date night?!) Pull out all of your supplies and start scrapping. One thing I like to do is scrap the page myself and have hubby do the journaling. And the same for him, he'll scrap and I'll journal.

Don't have supplies? Most craft stores (think AC Moore, Michael's,etc) host make it take it sessions where you can go and make pages at the stores.

C's birthday was this weekend. My sister in law made tie dye cup cakes and they were awesome! They looked cool and tasted great!


You'll need:
1 box white cake mix (and the fixings)
food coloring
icing

Fix cake mix according to box directions. Take one cup of cake mix and separate into four different bowls. (You should have one cup of mix in each of the four bowls) Add 1 teaspoon of food coloring into each bowl. (Each bowl should hold a different color) Fill cupcake liners with different color mix until you're about halfway up the liner. Bake as directed and ice. Enjoy!

Garden Update!

It's been forever since we've had a garden update. Finally things are starting to look up. Sorta. There's not a whole lot going on in my garden... Let me show you...


Our tomato is starting to turn red...hubby will be happy.


One little bell pepper is starting to grow. We have a ton of flowers so hopefully they'll start growing.


We have a ton of little cherry tomatoes growing. I'm not sure who is going to eat them though...



C's rose bush has started to take off, this is one of a few beautiful roses on it.



And C's sunflowers are growing like crazy!!

How is your garden growing? Hopefully better than mine!!

So, it seems like I've taken a little vacation. We've been camping, to the zoo, the water park, and thrown a birthday party. I've been babysitting like crazy and have had no time to do anything else. Things are finally starting to quiet down a little bit and I can't wait to get back into blogging. What better way to start than with a meal plan?

Mom stayed at our house this week and she was craving some chocolate. We ran to the store for a few things and she saw peanut butter no bake cookies. They were $5 for 12 of them! I talked her into making our own instead.


2 cups sugar

4 tablespoons cocoa
1/2 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 1/2 cups oatmeal

In a medium saucepan, combine the sugar, cocoa, butter and milk. Boil for 1 minute then add the peanut butter, vanilla and oatmeal. Drop by the tablespoonful onto waxed paper and let cool.

Meal Plan 7/10

Where as last week was kind of laid back, I had no kids and nothing to do all week,  this week is crazy busy. I have "off work" all week so my mom and I have planned field trips for this week. We're going to Lake Tobias on Monday, Hands on House on Tuesday and Wild River Water Park on Wednesday. Thursday we both have doctors appointments and Friday our day is undecided. Probably a quiet picnic at the park. Friday, Saturday and Sunday hubby, the boys and I are going camping with hubby's sister, her husband and her 4 kids. It should be fun. Plus, I have Ryleigh and her 7 puppies to care for also! Life is definitely busy around our house lately. :)

Cold Cut Subs
BBQ Pulled Pork (slow cooker)
Chicken Cordon Blu (slow cooker)

I made some cupcakes this weekend for my momma's birthday and thought I'd share the icing recipe with you. since it is my favorite, and the only icing I'll eat. :)



1/4 cup butter, softened
1 1/2 cups powdered sugar
1/4 cup peanut butter
1 tablespoon and 2 teaspoons milk
1 teaspoon vanilla extract

Combine butter and 1 cup powdered sugar in a small bowl. Beat until creamy. Add remaining powdered sugar, peanut butter, milk and vanilla. Beat until fluffy. Add more milk if needed for smooth consistency.

This is good on cupcakes OR throw it in the fridge and eat it with a spoon - it tastes just like peanut butter fudge. :)

Meal Plan Monday 7/4

So you can see how far behind I am - it's Wednesday morning and I'm just now posting my meal plan. :)

We had a lot going on this weekend, we were gone most of the time. The rest of this week should be pretty laid back. My boys are at my moms until who knows how long. I do have a few daycare kids this week, but not as many as I usually do. The only thing that might throw me off is my boxer girl. She's pregnant and due yesterday. We're all on edge waiting for her to deliver.

Our tentative menu for the week is:

hot dogs on the grill
burgers on the grill
steamers
pork roast
chicken quesadillas
leftovers
picnic at a friends house

Weekly Grocery Roundup 7/2

I went a bit over budget this week again, but I'm okay with that. It's a whole other post in it's self, one that will hopefully be coming this week.

1 Scott Wipe
5 Smart Balance Milk
1 loaf white bread
8 Nestle Milks
5 Popsicles
1 Breyers Blast Icecream
4 blocks Cabot Cheese

Total Before Coupons : $135.91
Total I Paid : $46.43
Plus, I received $1.40 in gas rewards, ($42 value)

I also bought 3 value packs of meat.
I walked by the case and the one pack was marked $0.44. Plus, if you bought 3 packs you got $0.40 off gas.

Total OOP $19.12
Plus I received $0.40 in gas ($12 value)

Total for the week : $65.55
But technically I only used $11.55 of my grocery money
(look for a post explaining this this week)

Feeding Four on $25 a Week - Stretching Meat

If you've been reading my blog long, you'll notice hubby is a real meat and potatoes kind of guy. I'm quickly learning C is as well. Stretching $25 a week feeding two meatatarians is a real challenge. I have got to get creative sometimes and that's just what I've done.

One of the ways I stretch our ground beef is by adding oatmeal to it. Yep, that's right, I add uncooked plain oatmeal to our meat. I usually only add 1/4 cup oatmeal to one pound ground beef. Any more than that and it will be noticeable. Obviously if you're making tacos or spaghetti you aren't going to add the oatmeal. Hamburgers, meatballs and meatloaf is basically what I use it in. I can usually get 2 more burgers out of the meat when I add in oatmeal.


Hubby walked in the kitchen one day as I was adding the oatmeal and he kind of freaked out. I said "dear, I've been doing this for months and you haven't noticed the difference." The next time he made burgers, he asked where the oatmeal was.
