Easy Way To Make Meatballs

I made a batch of meatballs for the freezer the other day. Every time I make meatballs, I hate getting my hands all in the meat. I can never seem to make each ball the same size so they all cook differently. I had the brilliant idea of using my  Cooke Scoop to scoop up the meat. It worked perfectly! I didn't have to touch the meat and every ball was the same size! They'll all cook the same and will hopefully turn out perfect. :)

Meal Plan 8/21

Another busy week ahead. Last week I did not stick to my plan at all. We ended up having chicken salad sandwiches, tacos, and I forget what else. This week there will be more easy meals. Whatever hubby can eat on the 3 minute drive to football practice.

Garden Update (AGAIN!)

Yesterday I said I probably wasn't going to have any more garden updates. All of my plants are all but done. (Really, they never got started!) I was finally able to pick our first tomatoes yesterday and the hubs and A enjoyed some of them with dinner. :)

Bread sticks are so easy to make and are one of my families favorite appetizers. The boys love help making them too!

melted butter, divided
1 tbsp garlic powder (I like things garlicky!)
1/2 tbsp parsley
3 tbsp Parmesan cheese (in the green can)

Make your pizza dough according to directions. Roll out and use a pizza cutter to cut into strips (sticks). Brush with melted butter and bake at 350 for roughly 20 minutes. Mix together garlic powder, parsley and cheese. Once bread sticks are removed from the oven, immediately brush with more melter butter and sprinkle with cheese mixture. Serve warm with sauce for dipping!












Garden Update 8/17/11

So it's been like weeks since I've been able to do a garden post. And sadly, this will probably be the last one of the year for me. :( We've had a rough year. Nothing is growing. Our pepper plants are just starting to bud. We do have 1 pepper that looks like it might make it into a dish. We have quite a few tomato plants that are flowering, but that's about all they're doing. Our cantaloupe plant flowers, then the flowers wilt. It's very depressing. Hopefully next year will be better!


A cantaloupe I discovered the other day... I doubt it'll get much bigger than this, but I'm hoping

Meal Plan 8/14

It's Monday already? I'm not quite ready to be making another meal plan. I think I'm in a meal planning rut. Last week, I used the meal plan a bit, and winged it the rest of the nights. I hate not knowing what I'm fixing for dinner. I stress over dinner until I know what is going to be served. That's one of the reason I meal plan. So even though I have no inspiration, I'm making one. Because I know I'll regret it if I don't. Luckily, we're going camping again this weekend so my SIL will help me plan the 2 nights we'll be gone. :)

Last night, C said something about monkey bread that made us all want some monkey bread. So A and I whipped some up for breakfast. It was so good, we ate it for breakfast this morning and snack this afternoon. It's now gone and they're still asking for more.
 
Monkey Bread


2 1/2 teaspoons active dry yeast

3 cups flour (I used 2 cups white, 1 cup wheat)
1 tablespoon ground cinnamon
1 teaspoon salt
1/4 cup white sugar
2 tablespoons butter, softened
1 cup water
 
1 cup butter
1 cup packed brown sugar
 
Put yeast, flour, cinnamon, salt, white sugar, 2 tablespoons butter and water into your bread machine in the order that is recommended by the manufacturor. Make sure that no liquid comes in contact with the yeast. Select dough cycle...   
Roll out your dough and cut into 1 inch sized pieces.
Melt butter in small bowl. Add brown sugar. Coat dough pieces in butter mixture and layer loosely in bread pan. If you have remaining mixture, pour it over the dough.
Bake at 350 degrees for 30-35 minutes or until golden brown. Remove from oven, place a plate face down in top of the pan and turn over until bread slides out onto plate. Serve warm and enjoy.

    Meal Plan 8/7

    This week starts football practice, so I'm looking for quick and easy meals. Not necessarily quick and easy to fix, but quick and easy to eat. We (or hubby at least) are more than likely going to be eating at the ball field. Hubby doesn't usually get home from work until 5:30ish and practice starts at 5:45. I'm going to be searching for easy to eat meals, so if you've got any PLEASE share them with me!

    What's Cooking Thursdays - Beer Battered Pizza Dough

    • 1 cup warm water
    • 1 tablespoons honey
    • 1 tablespoons active dry yeast
    • 5-6 cups flour
    • 1/2 teaspoons salt
    • 2 tablespoons olive oil
    • 6 oz of beer
    Combine yeast, water and honey in bowl. Let rest 10 minutes or until doubled in size. Add 2 cups of flour and salt to yeast mixture. Stir. Add the beer and olive oil. Mix. Add 1/2 to 1 cup of flour at a time until dough is no longer sticky. Knead for 8ish minutes. Let rise about an hour or until doubled.

    This makes 2 large pizzas.

    Top and bake at 450 degrees for 20 minutes.

    Home Made Slime

    Looking for a way to keep your little ones occupied? Try this great homemade slime recipe! It will keep them busy for hours.

    You'll need :

    2 parts (2 cups) water
    1 part (1 cup) cornstarch
    1/4 teaspoon food coloring

    Over low heat, slowly mix the water and cornstarch in a saucepan, stirring constantly. Once the cornstarch is dissolved and thoroughly mixed, it should start to thicken. Remove from heat and allow to cool slightly. Stir in the food coloring and let cool completely.
