What's Cooking Thursdays? Buttermilk Bread

This week, I'm sharing a buttermilk bread recipe. It was SO good, we ate the whole loaf. :)


1-1/4 cups buttermilk
1-1/2 tablespoons butter
2 tablespoons sugar
1 teaspoon salt
2 cups flour
1 1/3 cup whole wheat flour
2 teaspoons yeast

In bread machine pan, place all ingredients in order given.  Bake according to bread machine directions. OR mix all ingredients in a stand mixer. Let rise 1 1/2 hours. Bake at 425 degrees for 35 minutes or until golden brown.

Today, C took ham and cheese sandwich, carrot sticks, grapes, pudding and yogurt. Not a whole lot, but he chose what he wanted, so he will be happy with it.

Meal Plan 9/25

Yet another week has come and go. Time for another meal plan. I can't wait for football to be over so I can make so good sit down meals! This week, I'm trying a new recipe, Pepperoni Puffs that someone shared at What's Cooking Thursdays last week. I think it'll be a big hit with the kids and easy for hubby to eat on the way to football.

I finally got into the kitchen and was able to play around a little bit. I finally got to make calzones again and I'm so glad I did. They're realitively easy to make and so easy to eat! Perfect for an on the run dinner for a chilly night.

You'll need:
Pizza dough (I love this recipe)
Pizza Sauce
Mozerella Cheese
Favorite Pizza Toppings - we only used pepperoni this time

Seperate dough into small balls. Roll out one ball like a min pizza. Place a dollop of sauce on one side of the dough. Place a small handful of cheese ontop the sauce, repeat with toppings.
Fold the top of the calzone crust over the bottom into a half-moon shape. Seal the edges by crimping them with a fork (or your fingers if you're short on time). Be sure to press firmly enough to seal the edges and keep the fillings from leaking. Bake at 425 for 20 to 25 minutes or until golden brown.

Do You Have A TV in Your Kitchen?

When I was younger, my dad put a small TV in the kitchen for my mom. (Actually, I think it was so he could watch football while he sat at the dinner table.) We hooked our cable back up the other day, we also switched cable providers and they informed us we could get 3 cable hookups at no charge. Hubby suggested one for the kitchen. He knew I wasn't going to allow TV during dinner, so he gained nothing by it. We both agree, we don't want a TV in our boys room. They're still too young to have one in there.

So in the kitchen our TV went. (We also have a  TV in the living room and our bedroom if you were wondering) It's only been in there about a week. For the first couple of days, I just kind of looked at it. I even went so far as to push it back under the counter, I had no use for it, I don't normally watch TV during the day. Tonight, after I put the kids to bed I was packing lunches and decided to turn on the TV. And instead of hurrying through packing lunches so I could go relax and watch some TV, I packed lunches, unloaded and reloaded the dishwasher, cleaned up and swept up the kitchen. All while watching the football game on TV. :)

Meal Plan 9/18

I'm not sure why I'm meal planning during football season. I make the plan, then don't cook the meals that are on the plan. Last week, we had ziti. I made a big pan and we had leftovers. Quick, cheap, easy and healthy. We also had pizza (and leftover pizza), grilled cheese. Friday night we ordered a pizza with a free coupon I had. Saturday night we were at a wedding. Tonight, I was in no mood to cook, but I refused to order out because I don't want to "waste" that money. We had hotdogs instead. Maybe not the most healthy meal, but it was healthier (and much cheaper!) than the greasy food we would have eaten had we ordered out.

I haven't been cooking at all much lately. Between football, daycare, school and trying to find homes for the remaining puppies, life has been insane. So tonight, I have a different kind of recipe for you. It's a stain removal recipe... Homemade Oxyclean.

You'll need :
1 cup of water
1/2 cup hydrogen proixide
1/2 cup baking soda

Mix all ingredients together. Soak stained laundry in it for 20 minutes to overnight and then wash as usual.





My Memories Review/Giveaway

    Meal Plan 9/11

    I have come to hate meal planning. No, that's not quite right. I hate meal planning during football season. I am having a horrible time trying to figure out what to serve my boys that is filling enough for a dinner, yet quick enough to eat in 5 minutes, or on the way to practice. I've come to dread Sunday nights.

    A's birthday was Tuesday. I asked him if he wanted cupcakes or icecream cake. He said what any soon to be three year old would say "icecream cake and cupcakes!" So of course, I combined the two. And now I'm wondering why I didn't do it sooner!



    You'll need:
    12 oreo Cookies, crushed and divided
    2 tbsp. butter, melted
    1 qt cookies and cream ice cream
    1/4 cup chocolate syrup
    1 cup thawed cool whip
    Combine cookie crumbs and butter, press onto bottoms of 12 muffin cups. Top with 1 scoop ice cream. Drizzle with syrup, Top with cool whip and more cookie crumbs. Freeze overnight.

    Last year, I shared C's lunch whenever he went to school. This year, I thought I would do the same thing to hopefully give you some new ideas for lunches.

    Today he had : cheese stick, jelly sandwich, grapes, mini oreos, applesauce and gummies. I also threw in a banana.

    Meal Plan 9/6

    My, my. Life has been busy lately! As much as I love blogging, my family comes first and they have needed me the past few weeks. With school starting and birthdays, football and puppies, it's been crazy around my house. We are down to the last three puppies, and hopefully they will have homes soon. We're finally getting into a routine around here. E went from being a football parent to a head coach in two days. I went from being a football parent to a head coaches wife to head coaches personal assistant in as much time. Hopefully now that we're getting settled I will be able to blog again.

    Last weekend we went camping and today was A's birthday (he's 3!). Football is [supposed to be] three nights a week...
