It's almost November! That's hard to believe. We had our first snow{storm} here Saturday. It was a wonderful time for a storm and the first time I remember that all four of us throughly enjoyed the storm. There was enough to play in, it was on a weekend, so E didn't have to travel in it. We just lounged around the house all day, playing and cleaning. We all fixed spaghetti, bread and salad for dinner then we played in the snow some more. It was a great day!
I also sat down and made a whole months worth of meal plans. Now on Sundays instead of stressing over what the plan is for the week, I just look at my monthly plan. :)
Tonight, we were supposed to have turkey. My parents took us out for lunch at Golden Corral and we were too stuffed to eat turkey. Since the turkey was already cooked, we deboned it and will use it for
meals this coming week.

1 cup brown sugar, divided
1/4 cup soy sauce plus 2 tablespoons
1 teaspoon crushed ginger
4 cloves of garlic, minced
1/8 teaspoon red pepper
1 lb chicken, breast
1/4 cup tomato paste

Combine 1/4 cup sugar, 2 tablespoon soy sauce, ginger, garlic, and red pepper. Place chicken in a slow cooker and pour sauce overtop.Cook on low for 6-8 hours.
*optional* When done cooking, place chicken in a broiler proof dish.Combine remaining brown sugar, tomato paste, and soy sauce. Pour over chicken and cook under the broiler for 5 minutes or until chicken is slightly crisp. {{I'm afraid of the boiler, so I only did this with half our chicken, and I didn't leave it in long enough to notice a difference}}

Meal Plan 10/23
It is definitely getting colder around these parts. It was 38 degrees this morning when I woke up. Thankfully, it got a lot warmer than that this afternoon, but the evenings are starting to get chilly! Lots of warm meals and soups in our future! Plus, football is OVER so we'll get to sit down and eat as a family. I'm excited!

What's Cooking Thursday? No Rise Rolls

So, I lost track of my days this week (which is why this is being posted Thursday night and not Wednesday night). All you get this week is this awesome no rise roll recipe. ;) Check back next week for a yummy chicken dinner!

2 ½ C warm water
6 Tbsp honey
3 Tbsp yeast
2 Tbsp oil
6 C flour
2 tsp salt
1 tsp baking powder
Mix together water, yeast, sugar and oil. Let sit for 5-10 minutes or until mixture becomes bubbly. Add flour, salt and baking powder. Mix well. Shape into rolls. Bake at 400 degrees for 10-15 minutes.

Finally! A week with {almost} no football. We do have a meeting on Thursday, but we can finally eat good meals again! I'm so excited to be able to fix a nice sit down dinner.

What's Cooking Thursdays? *Bread Bowls*
Welcome to What's Cooking Thursday! A place for you to link up whatever it is you've been cooking at your house! Not a blogger? Leave your recipe in the comment section. - 2 3/4 cups flour (I use a mix of white/whole wheat)
- 1/3 cup dry milk powder
- 1 teaspoon instant yeast
- 1 teaspoon salt
- 1 1/4 tablespoons olive oil
- 1 1/4 tablespoons honey
- 1 cup warm water
Mix all ingreients in your bread machine. Set to dough cycle and start. When cycle is complete, divide dough into 4 balls. Cover with plastic wrap and place in the fridge for at least an hour. Two hours before serving, remove from the fridge and let set on counter. 30 minutes before serving, remove plastic wrap and let rise while you preheat the oven to 400 degrees. Take a knife and slash the top of the bowls several times to allow them to expand while baking. Bake for 25 minutes or until golden brown.
We served cheeseburger soup in ours. :)

Meal Plan 10/2
What a weekend! So cold and rainy, I am NOT looking forward to winter. It was hubby's birthday on Saturday, we went out to dinner. Sunday, my parents came up and my dad and hubby moved my washer and dryer in to my house (instead of on the back porch). I fixed a roast for dinner, that was so good. It has been so cold the past few days, I'm looking forward to fixing some warm dinners! Monday night we have NO football! So we'll get another sit down dinner together. :)
