Happy July everyone! I'm struggling with meal planning already - this is why I stopped in the first place. But one reason I started blogging again was so I have a little accountability for meal planning. :) This week is supposed to be rainy and hot; and we also have a baseball tournament most of the week.

Chicken, Broccoli & Cheese Skillet
We had this for dinner the other night. Everyone LOVED it, even though A said he wasn't eating any. (He ended up having two servings) If you're looking for a super simple, quick meal, try this one!
You'll need:
1 pound chicken, cut into cubes
2 cups chopped broccoli
15 ounces chicken broth (I used homemade)
1 can Progresso Cheese Cooking Sauce
1 teaspoon pepper
1 teaspoon Garlic Garlic
2 cups pasta, uncooked
1 cup cheddar cheese, shredded
Cook chicken in large skillet until no longer pink. Add broccoli, broth, cooking sauce, pepper, garlic, and pasta. Bring to a boil. Reduce heat to lowest setting, cover, and simmer for 20 minutes, or until pasta is tender. Add cheese and stir until melted. Serve.

Yesterday was my best friends birthday. I wanted to make her a cake, but I didn't want the same old thing. I've seen cake pops around the blogosphere and decided to give them a shot. They were relatively easy and oh so good. I don't even like cake but these cake balls are the best.
Prepare cake according to the package directions. Bake in a 9 x 13-inch pan. Allow to cool completely. Once the cake has cooled, place sections of the cake into a large bowl and crumble with your hands or a fork. When you’re finished, you should have very fine cake crumbs. Next, work the can of icing into the cake crumbs. (Use 3/4 can of icing for firmer cake balls.) Then, roll the mixture into balls. I used my cookie scoop. Throw your cake balls into the freezer until firm, so they don't crumble when you coat them in chocolate. Melt the chocolate according the package directions.
Insert a lolli pop stick into each ball. Dip into chocolate until the ball is covered.Place them back down onto waxed or parchment paper until the chocolate has set. Decorate and enjoy!

I really have not been cooking new recipes at all. We've been using up meals in the freezer, having simple meals. I fixed the boys pizza pinwheels the other day for lunch so that's the new recipe you get. :)
1 teaspoon dried basil


You'll need:
1 recipe pizza crust
3/4 teaspoon garlic salt1 teaspoon dried basil
1 1/2 cups shredded mozzarella cheese
1/2 cup chopped pepperoni1 cup pizza sauce
Roll out pizza dough into large rectangle. Sprinkle dough with garlic salt, basil, cheese and pepperoni. Roll dough up tightly to form a log. Slice into 1-inch pieces. Place rolls on lightly greased baking sheet. Bake at 425 degrees for 8-10 minutes or until golden brown. Serve with warm pizza sauce.

Meal Plan 2/13
I didn't menu plan last week and all week long I wondered why. I was totally off my game and at 5:00 each night, I had no clue what to feed the troops. I couldn't even tell you now what I fed them. What I can tell you, is that I will be menu planning from now on. :)

Need a quick and easy weeknight dinner? Try Chicken Cordon Blu Chowder!
2 cans {Campbell's} Chicken Corn Chowder 1 cup cooked diced chicken 1 cup cooked diced ham 1 cup shredded cheese (Swiss is ideal, I used mozzarella because I was out of Swiss) Combine all ingredients in a medium saucepan. Warm over medium low heat until heated through. Serve with bread and a salad.

I was supposed to share the chicken corn blu chowder but once we tried the chicken taco soup, I knew I had to share it this week. It is so good, even A ate it! I served it with tortilla chips - it would be a perfect dip/dinner for the Superbowl.

you'll need:
1/2 onion, diced
16 oz jar salsa
16 oz chicken stock
1 can of corn, drained
1 package taco seasoning (or homemade)
3 oz tomato paste
1/2 tsp cumin
1 lb chicken breasts, cooked/chopped
10 oz cream cheese - I used Kraft Cooking Creme original
In your crock pot, combine all ingredients except cream cheese. Cook on low for 6-8 hours. Half an hour before serving, stir in sour cream. Serve with shredded cheddar cheese and tortilla chips.
